Oi Gente!!

It’s summer and the next potluck bbq party is right around the corner.  With that, you’ll need to bring a side dish that is as bright and beautiful as a hot summer day and as delicious as it gets.  This pineapple rice is sooooooo great and perfect for all grilling occasions, but it is so packed with flavor that it is super yummy all by itself as well!

Pineapple Rice

  • 1 Tbsp coconut oil
  • 2 cloves of garlic, minced
  • 1/2 onion, cut into strips
  • 1/4 tsp cumin
  • 1/2 tsp turmeric
  • 2 cups of chicken stock (water ok)
  • 1 cup uncooked long grain rice
  • 1 pineapple, peeled, cored, and diced
  • 1 Tbsp of pineapple juice
  • 1/4 cup of raisins
  • 1/2 cup of cilantro, roughly copped
  • 1/2 cup of almonds, roughly copped
  • Salt to taste


  1. heat the coconut oil in a medium size pan, over medium heat
  2. add the onions and cook them until they are transparent, about 2 mins
  3. add the garlic and cook until fragrant, about 2 mins
  4. add the rice, and stir
  5. add salt, cumin, and the turmeric and stir
  6. add the stock or water and bring to a boil
  7. when the liquid is boiling, reduce heat to low, cover and cook util rice is tender
  8. when the rice is cooked, add the pineapple juice, the pineapple, and raisins (do not stir), cover and leave it covered for about 10 mins
  9. after 10 mins, add the cilantro, and the almonds and stir to combine
  10. Bom Apetite!
