Who doesn’t love a good cake, especially at this time of the year?

This Apple Tart Cake is simply marvelous. It’s crunchy on the outside, moist and soft on the inside, and the apple flavor just explodes in your mouth! This appley treat tastes ultra special during the holidays, but it is guaranteed to delight your family and friends any time of the year.

I’m pretty picky when it comes to apple baked treats, but when I was in Germany I ate the best apple cakes and desserts, like ever! The apple to everything-else ratio was always on point, they were never too sweet, and the texture always seemed impeccable. So, when I came back, I decided to create something to give me that special feeling I got, every time I ate anything delightfully appley when I was there. Here it is!!

I decided to make a super easy, tea-time, single layer type of cake in honor of my mom.  Our afternoon tea and coffee time was very precious to us, and quite often we had it while enjoying a good piece of cake we’d bake after lunch. All the many cakes, in the many afternoons, with the many cups of coffee, filled with all the laughter are some of the things I miss the most now that I live so far away from my mom. I kept the cake easy to make, so you can make it quick, and enjoy it with someone you love!

Now that the weather is cooling off, brew a nice cup of coffee or tea, grab a good book or some great company, and have a lovely start or end of day with this yummy Apple Tart Cake. I hope you enjoy it with lots of love and laughter!

Apple Tart Cake Step by Step

Preheat your oven to 350F, then gather up all your ingredients.

Melt the butter in a small bowl, measure the sugar…

Combine all the dry ingredients in a large bowl. Apple Tart Cake Prep

And the dusting ingredients in a small bowl, and set aside.

Cut a little piece of parchment paper to cover the bottom of a removable bottom tart pan. This is optional, but when I don’t use the paper, things get a little (or a lot) messy. I also put the tart pan on a baking sheet to make it easier to handle. One time I grabbed the tart pan the wrong way and dropped batter everywhere, including the bottom of the hot oven. Don’t be that person too! haha!

Using a hand mixer or just your muscles, as my mom does, beat the eggs and the sugar.

Beat them until frothy…

And stringy.

Then, add the melted butter and the vanilla extract.

And keep beating!

Add the dry ingredients to the egg mixture and weeeeeeee beat some more.

Until it looks like this!

Add the apple chunks and give it a little stir.

Dump it in the tart pan lined with parchment paper.

And decorate with more apples!!!!

I usually just add some apple slices, and make a little rose for the center.

Then sprinkle the turbinado sugar mixture on top to give your Apple Tart Cake a little crunchy texture.

Bake at 350F until its done – about 35 mins. When the cake is fully baked, I also put it under the broiler for about 2 mins, just to get an even crunchier top!! Soooo delishhhh!

Serve the Apple Tart Cake by itself with a cup of tea or coffee…

Ingredients

  • 3 whole eggs
  • 3/4 cup of superfine sugar
  • 1 stick (about 1/2 cup) of butter, melted
  • 1 tsp vanilla extract
  • 1/2 cup of all purpose flour
  • 1/2 cup of almond flour (plus 1/2 Tbsp for dusting)
  • 1/2 tsp of baking powder
  • a pinch of salt
  • 2 Honeycrisp apples, cored, 1 sliced and 1 peeled and cut into large chunks
  • 1/2 Tbsp turbinado sugar, for dusting

Method

  1. Preheat oven to 350F
  2. Line the bottom of a 9-inch, removable bottom pan with parchment paper, and brush the sides with a little butter - set aside
  3. Add the turbinado sugar and the 1/2 tbsp of almond flour to a small bowl, and whisk to combine - set aside
  4. Add the all purpose flour, the almond flour, the baking powder and the salt to a large bowl, and whisk to combine - set aside
  5. Beat the eggs and the sugar in a large bowl, using a hand mixer, until the eggs look frothy and stringy (a few minutes on medium speed)
  6. Add the melted butter and the vanilla extract to the egg mixture, and beat a few more minutes
  7. Add the dry ingredients to the egg mixture, and beat until combined
  8. Add the apple chunks, and fold with a spatula to combine
  9. Pour batter into lined pan
  10. Decorate with the apple slices
  11. Sprinkle with the turbinado sugar mixture, as desired
  12. Bake for approximately 35 minutes, or until toothpick inserted in the center comes out clean
  13. Cool in the pan in a cooling rack for approximately 10 minutes
